2016 QUATTRO, Cabernet Sauvignon

2016 QUATTRO, Cabernet Sauvignon

A blend of Cabernet Sauvignon fruit from four top vineyards all co-fermented in a single tank, this powerfully-structured, limited production Napa Valley Cabernet was a result of our winemaking team's quick thinking, and a tribute to the record 2016 harvest season.

Quattro is the result of the winemaker's instinct, quick thinking, and a little bit of luck. On October 15, 2016, after harvesting Cabernet Sauvignon from 4 of the Castello's top vineyards, a small quantity from each was left over due to the 4 intended fermentation vessels coming full. Knowing that the fruit was all of great quality, he decided to ferment the leftovers together in a single small tank. Upon tasting the wine just as the fermentation was finishing up, we knew something special had occurred, and we proclaimed that the "Quattro" warranted a unique bottling. No blending has been done with this wine since that fateful day the grapes were plucked from the 4 distinct vineyard sites from across the Napa Valley.

Wine Profile
Ratings
A co-fermented blend of Cabernets sourced from four different vineyards, Castello di Amorosa’s thusly named Quattro is a rich and fairly complex offering that combines elements of cocoa, sweet oak, subtle suggestion of dried herbs and a mildly olive-like component with ripe, sweet-leaning fruit. It is full-bodied and slightly supple to start with rising tannins coming on to dry its finish, but its overall balance is quite good and, although it promises to age nicely for a half-decade or more, it should shed enough of its slight youthful toughness to be approachable in two or three years. - Connoisseurs Guide to California Wine
Vineyard Notes
The vineyards utilized for this unique Cabernet are Gerlach Hammond, Perata, Rocca, and Villa Amorosa; vineyards typically used in the final blends of our Il Barone Cabernet Sauvignon and La Castellana Super Tuscan Blend.

Winemaker Notes
Following the very small 2015 harvest, it was heartening to see the vines recover and bounce back to produce not only extremely high quality fruit but also some bounty in 2016! Harvest was earlier than expected, and we observed optimum flavor and phenolic development progress as we harvested. Across the board, acids are firm and pH is slightly lower, so the wines should be well-structured with very good aging potential. This is an exciting vintage with a lot to like! - Brooks Painter, Director of Winemaking
Food Pairing Notes
This bold single vineyard Cabernet Sauvignon pairs perfectly with filet mignon.
Production
The brainchild of Winemaker Peter Velleno. Who was in the prime time of Harvest when his tank space began to run low. As a few premium lots of grapes still needed to go into the tank, he decided to put Cabernet Sauvignon grapes from 4 different vineyards together in a single tank, alittle experimentation if you will. 2 Years later the Quattro was tasted to the delight of everyone. Now the Quattro is a regular occurance at the Castello mixing some of the top grapes in all of Napa Valley.
