Tasting Notes
This deep yellow-gold hued wine offers aromas of honey, sweet vanilla, apricot nectar, and fragrant flowers. The bouquet is complimented by the toasty notes from the selection of French oak barrels and the aging “on the yeast” for 19 months. The wine is uncommonly viscous and lingers on the palate long after tasting. The natural sweetness leaves a lasting impression that is a signature of perfectly overripe wine grapes.

Winemaker Notes
Il Passito is a regal dessert wine made from overripe grapes which develop Botrytis cinerea, or “Noble Rot”, shriveling the skins and enhancing sugar, acid, and flavor intensity. This succulent and deliciously spicy white wine is made in the style of some of the world’s greatest dessert wines, such as Sauternes and the “dried grape” white wines of Sicily such as “Passito di Pantelleria”.
Food Pairing Notes
A great after-dinner sipping wine, perfect with farm cheeses and sweet preparations of the Sicilian tradition. Its rich concentration and delectable peach and apricot flavours should be enjoyed with dried fruit (especially figs), or foie gras with honey or almond paste on a crostini to show its complex and intriguing aromas and succulent spice. It is very rich on the palate and also ideal with seasonal fresh fruit desserts.
