Tasting Notes
The wine displays its bright amber yellow colour, the bouquet offers sweet sensations of dried figs, honey, herbs and mineral notes. It has a wonderful depth of personality, with intense notes of apricots and peaches, Impressive on the palate with outstanding complexity due to a fusing of the honeysuckle “botrytis” notes and natural sweetness followed by a prolonged finish.

Food Pairing Notes
A great sipping wine, perfect with herbed cheeses, foie gras and sweet preparations of the Sicilian tradition. The wine should be tasted with dried fruit or almond paste to show its complex and intriguing aromas and succulent spice. It is very rich on the palate and also ideal with fresh fruit desserts.

Typically, when I drink wine it’s for a special occasion. Recently, I traveled to Napa Valley to visit some family and friends and ended up wine tasting at Castello di Amorosa. Although I had the opportunity to chill with the author of Cocaine Saints and go fishing with the #1 bass fisherman in the state of California, it did not compare to my experience at Castello di Amorosa and tasting the sweet II Passito wine. Castello di Amorosa is one of those vineyards that will blow you away - the history alone is amazing. The staff is very professional and knowledgeable – I learned a lot. I would describe the II Passito wine as a king elevated to god status then bottled, corked, and wax sealed. It’s a bit expensive for the size of the bottle, but the taste makes it worth it. Hands down and two thumbs up –Best Sweet Wine Ever – just ask my wife! Pair a glass with dessert, fresh fruit, or with nothing at all. Opening a bottle of Il Passito is a special occasion all on its own.
